Edwin “Pike” Kubik, 81, of Bismarck, passed away September 8, 2026, at his home under the care of hospice.

Mass of Christian burial will be held at 10:30 AM on Monday, September 14, at Ascension Catholic Church in Bismarck, with Fr. Russell Kovash as celebrant and Deacon John Paul Martin as assistant. A private burial will take place at St. Mary’s Cemetery in Richardton, ND.

Visitation will be held from 4 to 6 PM on Sunday, September 13, at Weigel Funeral Home, Mandan, with a Time of Sharing at 5 PM. Visitation will continue one hour prior to the service at the church on Monday.

Pike was born in Dickinson, ND, the third of fourteen children to Anton and Catherine (Pedeliski) Kubik. He attended school in Richardton before setting out on a life filled with hard work and new adventures. Over the years, Pike lived and worked in several states, including Montana, Oregon, and Idaho. He moved to Montana to do some landscaping work and later to Oregon where he worked in logging and at a lumber mill before eventually returning to North Dakota. Most recently, Pike worked at Sam’s Club in Bismarck, a job he truly enjoyed because of the many coworkers he came to know.

Pike was an exceptionally talented gardener and landscaper who took great pride in making things grow. He was well known for creating his own “Outlaw Eddy’s” seasoning, which he shared at farmers markets and various stores. Pike was also a wonderful cook and was known for his delicious chili, borscht soup, homemade jerky, and chokecherry wine. He had a sweet tooth for root beer barrel candies, Chuckles, Black Crows, circus peanuts, and strawberry shakes.

Known for his strong work ethic and sociable personality, Pike enjoyed visiting with everyone he met. He was always stylishly dressed, usually wearing one of his signature hats. He enjoyed leather stitching and was an avid Elvis enthusiast.

Pike loved his dog, Bandit, and his cat, Matchew. Family and friends meant everything to Pike. At family gatherings, he brought plenty of laughter and good-natured teasing. He was never afraid to set out on a new adventure and often reminded those around him to “stop and smell the roses.”

Pike was deeply rooted in his faith in the Lord. A couple of years ago, he accepted Jesus Christ as his Lord and Savior, and his family finds comfort in knowing that he will remain with his Lord forever. His mother taught her children to love God, love one another, and always forgive—values Pike carried throughout his life.

Pike is survived by his daughter, Stacy Laubsch; son, Ryan Kubik; grandchildren, Brittany, Jessica, Dakota, McKinsey, Mercedes, Mariah, McKayla, and Madison; and his 11 siblings, Rosie Ereth, Jim “Heinz” Kubik, Kathy (Dennis) Geck, Roger (Karen) Kubik, Rick (Barb) Kubik, Adrian Kubik, Rita (Will) Duckwitz, Tim (Janice) Kubik, Joanne (Jerry) Thomas, Yvonne Kubik, and Ronnie Kubik. He is also survived by his special friend and caregiver, Rachel, along with numerous nieces, nephews, cousins, and friends.

Pike was preceded in death by his parents, Anton and Catherine Kubik; infant brother, Jerome; sister, Bernie; nephews, Dion and Brian; and brother-in-law, Ray Ereth.

Pike’s family would like to express their sincere gratitude to the staff of Sanford Hospice and Sanford Medical Center, Dr. Moen, and his home healthcare providers for the compassionate care given to him.
